This is less of a recipe and more of a ‘food you have in the cupboard and can throw together and eat whenever’ type of a meal.
Ingredients (for one portion)
1 cup cooked brown rice
1/2 cup edamame beans (I always have a bag of frozen ones available)
1 tbsp tamari/vegan soy sauce
1 tsp sesame seeds (optional)
Wedge of lime (optional)
1 tsp sesame oil
Method
Heat the oil in a wok. Add the edamame beans and stir fry for a few minutes until heated through (especially if frozen beans are used). Add the rice and the tamari and stir fry just until everything is piping hot. Optional garnishes are a sprinkle of sesame seeds and a squeeze of lime. Serve immediately.
