I cannot believe that I have only just discovered chickpea omelettes! So easy and so tasty. This is my new favorite weekend breakfast.
Ingredients
Serves 1 (because I’m a bit greedy and who only wants one pancake each anyway?!)
1/3 cup chickpea (or gram) flour
1 tbsp nutritional yeast
1/2 tbsp ground flax
1/2 tsp ground cumin
1/4 tsp garlic powder
1/4 tsp turmeric (for the nice golden colour!)
Handful of finely chopped kale with thick stems removed (substitute with anything that isn’t too chunky- I’ve also tried chives)
3/4 cup water
Method
Just whisk it all up!
Let it sit for 5 minutes whilst you heat your pan- oil if needed but this can be done oil free if you have a good non-stick pan.
Cook for a couple of minutes each side on a medium high heat.
This made two small pancakes. This is only enough for one person (in my hungry opinion) so double up as needed!
