Garlic and canellini dip

This dip is similar to hummus in some ways however the cannellini bean (white bean) gives it a lovely creamy texture. The garlic provides some much needed flavour with this type of bean and a twist of lime just adds a bit of zing. As canellini beans don’t have a lot of their own flavour, unlike chickpeas which are quite distinct, this recipe could be changed up with the addition of nutritional yeast to make a cheesy style of creamy dip.

Ingredients (for two to share)

3 cloves of garlic, chopped (I like a good garlicky flavour- reduce for a milder taste)

1/2 can canellini beans

Squeeze of fresh lime

Salt and pepper to taste

Method

Sauté the garlic in a little water using a non-stick pan. Add more water as needed. Add the canellini beans and garlic to a small food processor and blitz until it resembles a creamy dip. Add some freshly squeezed lime and season. Blitz again and taste. Add more lime or seasoning as desired.
